Ingredients
½cupblueberries
1/2ozdried figs
1ozcroissant
1/3cupfat-free cottage cheese
Peanut Butter Protein Balls
1/3 cup + 1 Tbsp + 2 1/4 tsp Old Fashioned Oats
1 1/3 Tbspvanilla protein powder
3 1/2Tbspcreamy peanut butter
1 2/3 Tbsp unsweetened applesauce
3 1/2Tbspdried strawberries
2 ¾tsphoney
2 ¾tspmini semi-sweet chocolate chips
Instructions
Wash berries.
Slice figs into quarters.
Bake croissant according to package.
Whip cottage cheese in a food processor for 30 seconds.
Prepare peanut butter protein balls according to recipe.
To assemble: In four compartment box, place 1/2 cup blueberries, 1/3 cup whipped cottage cheese with fig quarters on top, croissant cut in half and 2 peanut butter balls.
Peanut Butter Protein Balls
Combine oats, protein powder, dried strawberries and chocolate chips in a bowl. Stir to combine.
In a sperate bowl, mix peanut butter, applesauce and honey.
Add peanut butter mixture into oat mixture and stir to combine.
Form the dough into one inch balls (1 oz). Store in the fridge or freezer.
Notes
Chef's Tips: Add drizzle of honey to the cottage cheese for en even tastier creation. Also, you can make larger batches of the protein balls and freeze. If properly wrapped and sealed, they will keep for about 3 months.
