Ingredients
1.5cupcheese grits
¼cuppico de gallo
2eggs
2tspoil
1/4cupdiced red bell pepper
1/4cupdiced green bell pepper
1/3cupdiced yellow onion
4ozbeyond steak
2cupsarugula
Instructions
Prepare cheese grits and pico de gallo.
Heat oil, cook onions and peppers for 2-3 minute. Add beyond steak and cook until heated through. Hold warm.
Cook 1 egg to order with pan spray.
Toss arugula with pico.
To assemble one serving place ¾ cup of grits in bowl, top with ¾ cup steak and onions, top with fried egg, and 1 cup or arugula tossed with pico.
Notes
Chef Tip: Squeeze with fresh lemon or lime to provide an extra boost of flavor on the greens.
