Instructions
Make the crostini
Brush baguette slices with olive oil and sprinkle with salt and pepper. Bake at 350°F for about 4-6 minutes. Cool and reserve.
Make the guacamole
Remove skin and pit from avocado and place in mixing bowl, add goat cheese (reserve some for garnish).
Chop oregano and add to bowl. Mash all together with a fork.
Add pomegranate (save some for garnish), salt and juice from lemon. Mix well and taste.
Garnish
Place guacamole on plate or bowl and sprinkle with pomegranate and goat cheese, Add crostini.
