Instructions
Puree pear, juice, vinegar, ginger, salt and pepper in a small blender until smooth. Add oil and blend again.
Thinly slice pears, ensuring seeds are removed.
Place 1-1/4 cup spinach, 1/4 each pear and 1⁄4 cup walnuts in a large bowl. Drizzle with 2 Tbsp. dressing and toss lightly to coat. Serve immediately.
