Poppy seed crusted baked chicken with blueberries and almonds over mixed greens

3ounceboneless, skinless chicken breastcubed
1tspfresh lemon juice
1/8tspground black pepper
2ouncespring mix lettuce
1/4ouncefresh red onionsjulienne sliced
1ouncefresh carrotjulienne sliced
1Tbspsliced toasted almonds
Preheat oven to 350F. Toss diced chicken with lemon juice, poppy seeds, salt, black pepper and oil. Place chicken on a roasting pan and bake until internal temperature reaches 165F, about 15 minutes. Chill and set aside cold.
Mix together lettuce, blueberries, red onions and carrots.
